bbq lunch
we have been making this awesome bbq in our crock pot almost every saturday.
onion
garlic
a couple leafs of chard or spinach, chopped (stems too)
meat (pork, chicken)
a few teaspoons liquid smoke
a few tablespoons bbq sauce
some tabasco
salt and pepper
put all ingredients in crock pot before you go to sleep. when you wake up drain off the sauce/fat and set aside. mix the bbq with some bbq sauce.
with the fat, sauce mix you can skim off the fat and throw and use the gelatin stuff underneath in a risotto.
for the bun.
1 1/2 cup flour
a little yeast
about 1/2 teaspoon salt
a few tablespoons fat (we use lard) melted in some water, let cool until warm.
mix ingredients in bowl. your dough should be shaggy but not soupy. If you think you added to much water add more flour.
put a plate or towel on top of your bowl and put the dough on top of your refrigerator overnight. when you wake up preheat your oven to 400 F. knead out the dough a little on a floured surface just until the dough doesn't stick anymore. divide your dough into 4 balls and make a disk out of each one. don't worry if they look flat. put the disks on an oiled baking sheet and put a towel over them and let rest for 30 minutes. bake for 20 minutes.
when it's lunch time, if you can wait that long, put some dijon on your bread and add bbq. I like to put onions and cheese on top too. :)
